

On Friday night I was so hungry I needed something quick and easy so I made a casserole from sausage and beans and a sprinkle of Joes smoked cheese. Not the most sophisticated dish but perfect weeknight food with a glass or two of red.

I had some time and was on my merry little way to boredom. I stopped at the library and found the most delightful book. The King Arthur Flour Baker’s Companion. And let me tell you, it is heavy, thick, and so far, quite delicious. I found this recipe the first time I opened the book. It was the page I opened to. I had seen a twitter friend (@firemom) talking about these on Tuesday (Fat Tuesday) and was intrigued when I opened the book to it. It had to be a sign, right?

Back in my days in the U.S. Marines, when I was stationed in Southern California, I used to take weekend trips with some friends down to Rosarito Beach, Mexico. Among all the wonderful things that Rosarito Beach had to offer, one of my first stops was to this little taco stand across from the hotel we always stayed at.

Bacon. I’m like the dog in the Beggin’ Strips commercials when it comes to this wonderful part of the pig. Bacon is good with everything, and I do mean ERVERYTHING. About a year ago, I came across one of the best ideas for bacon since someone came up with the BLT. It is called the Bacon Explosion.
