Contributor: Tony Brueski Beef had been getting a bad wrap lately. From Pink Slime to Mad Cow those juicy heifers don't seem to be getting a break. I'm not an anti-beef person. In fact if it wouldn't otherwise mean an imminent death by the age of 35, I would eat the stuff at nearly ever meal. But I can't help but feel that all these "issues" the industry has been dealing with as of late may be a sign of a bigger problem.
Is it just me or is there something really wrong with this "food competition"? I'm all about the hot dogs, burgers, and cheese curd competitive eating events, but 70k worth of caviar? Seriously? This event, sponsored by Moscow caviar producers had some very lucky contestants shoving back about 1lb of caviar as quickly as possible. The winner downed his in about 1 minute and 8 seconds. The big prize... Another pound of caviar to share with friends and family.

I went with an old staple from virtually every super club menu I can remember. "Mahi Mahi". This is not your typical, "smother the fish in pineapple chucks" recipe though. This is a recipe that uses one of the most versatile ingredients in my kitchen. Beer.
