Barbecue Chicken Sliders

Barbecue is one of those flavors that most people enjoy, because of that my barbecue chicken sliders seem to hit the spot almost every time. Even the most pretentious food snobs have a soft place somewhere inside for a rich or sweet barbecue sauce from their childhood. Because of that, this is one of my favorite crowd pleasing dishes to make when I don’t have a lot of time and still need to be large group.

This recipe uses chicken as the meat source, but you can easily substitute pork, beef or really any sort of meat that tastes good with barbecue sauce (you’ll be hard-pressed to find one that doesn’t).

Here is the full recipe:

Barbecue chicken sliders
You will need:
1 Pack Mini Buns

4 Chicken BreastsFor Sauce:
2 Cups Ketchup
1 Cup Brown Sugar
1 Can Cherry Pie Filling
3 Table Spoons Molasses
1 Large Red Onion
3 Tablespoons Worcestershire Sauce
2 Tablespoons Soy Sauce
1 Teaspoon Liquid Smoke
1 Tablespoon Ground Coriander
2 Tablespoons Ground Fennel Seed
1 Tablespoon Cyan Pepper
3 Tablespoons olive oil
Salt/Pepper to Taste
To make the chicken: Grill or saute in a pan until fully cooked. Let rest for 10 Min’s after cooking then roughly chop in to small pieces.To make the BBQ Sauce: In a large saucepan, heat olive oil and add a the onion (finely chopped) and let saute on medium heat until browned. Add in 1/2 cup of cherry pie filling and stir, Then add in Ketchup, Molasses, Soy Sauce, Liquid Smoke, and all spices.
Let simmer on low heat for 30 Min’s. Taste and add additional seasoning to taste.
Combine the sauce and chicken in a bowl or sauce pan and mix well. Scoop out serving size portions on to mini buns and top with slaw mix if you would like.
