Crab Stuffed Prawn with Melted Brie

Our friend Clauda Danis who owns the Coolabah Motel in Walgett Australia has shared some more amazing romantic dinner recipes with us just in time for Valentine’s Day. Here is her recipe for Crab Stuffed Prawn with Melted Brie.


Large green prawns

Potted or fresh crab meat

1 250 gram brie cheese




1 finely dice white onion

1 cup finely diced leak


1/3 cup white wine

1/3 cup vegetable stock

1 egg

1 cup milk

Vegetable oil



Method for prawns

v  Peel the prawns keeping the head and tail intact – remove only the body shell and legs

v  Slice down the centre of the underbelly(not all the way through) to create a pocket – refrigerate

v  In a sauce pan add butter, onion, leak and fry till transparent and sweet (caramalised) de glaze the pan by adding white wine

v  Add in crab meat one combined take the prawns and stuff this in the belly of the prawn

v  In a bowl add milk and 1 egg and wisk

v  In another bowl place breadcrumbs and season with salt and pepper

v  Crumb the entire prawn

v  In a frypan add 2 inches of oil heat frypan to medium

v  Place skewers in prawns from head to tail (this will stop them from curling)

v  Cook until golden

Method for brie sauce

v  In a small sauce pan add vegetable stock and brie heat till melted
