Gnocchi in Roasted Garlic and Spicy Dried Cherry Tomato Sauce

This is a dish my entire family loves. Its simple to make, and every one can help. From chopping garlic, to stirring the amazing sauce as it simmers. The best part is… this is so easy to make!



 

1) Can diced tomatoes (seasoned with basil and garlic if you can get it)
2) 1/4 Cup minced garlic
3) 1/2 Cup dried cherries
4) 2 canned chili peppers in Adobo sauce (chopped very fine) (Often found in the Mexican cooking isle)
5) 1 Cup Water
6) 3 Tablespoons Balsamic Vinegar
7) 1/2 Cup Brown Sugar
2 Packages of pre-made Gnocchi.

FIRST: Roast the garlic with some olive oil in a pot for about 3-5 mins until slightly browned… add in the dried cherries and chipped chili peppers. Stir them around for 2 mins to evenly heat them and spread the flavors around. Then add in the Balsamic Vinegar and Stir an additional 1 min.

SECOND: Pour in the can of of diced tomatoes and add the water. Stir and then let simmer on medium/low heat for 30 mins.

THIRD: Cook the pre-made Gnocchi according the the package directions and then drain.

FOURTH: Mix the cooked Gnocchi in with the sauce in a large bowl or pan. Top with shredded Parmesan or cheese of your choice and serve.
