Make the Roux – 1/2 stick butter with equal amount flour. Stir in pan until blond in color and slightly cooked (about 5 mins).
Add in garlic and continue to stir…
Add in 1 1/2 Cups chopped
Pepper Ladle in chicken stock about 3 cups over 5 mins and let simmer…
Add in 4-5 Cups crawfish tails and stir.
Add in Cayenne pepper to taste with salt and pepper.
Stir and let simmer (add more chicken stock if needed for stew consistency)
Let simmer for 5-10 mins then server with or on rice.
